Cranberry Tangerine Shrub


This largely hands-off, incredibly simple shrub recipe combines tart apple cider vinegar with sweet-tart, luscious cranberries and tangerines. For a drink brimming with holiday flavors, combine this ruby-colored shrub with sparkling waters, tonics, or spirits.



Ingredients :

  • 50 g of sugar
  • three tangerine zest strips, ideally organic (see recipe note)
  • 2 cups whole, washed cranberries, if frozen.
  • Apple cider vinegar, half a cup
  • Serving sparkling water


Special Equipment

  • 1 glass jar (1 quart)


STEPS :

     1. Mix the sugar and zest :

Toss the sugar and zest in a quart glass jar. Use a bar muddler or the back of a wooden spoon to gently stir the zest into the sugar (the zest will soften as it sits in the sugar in the next step). For two hours, cover and leave the counter area empty.


     2. Tangerines to be juiced :

Juice the 3 tangerines while waiting. Drink about half a cup of juice. Place aside.


     3. Cranberries and vinegar are combined :

In a blender, combine the cranberries and apple cider vinegar. For 20 to 30 seconds, blend until pureed. Place aside.


     4. Take the sugar's zest out :

Remove the sugar's zest after two hours and throw it away (or compost!).


     5. Combine the infused vinegar and sugar :

Place the pureed cranberries and tangerine juice in the container with the sugar. To mingle, blend. It will be a thick mixture.


     6. Steep for 2 days :

For 2 days, place the container on the counter with a tea towel or other thin cover over it.


     7. Bottle the shrub after straining it :

After two days, pass the contents through a cheesecloth or fine mesh strainer placed over a medium basin. Do not press on the particulates in the strainer; give the liquid at least 10 minutes to drain out. Throw away the solids.

Put the liquid in a glass bottle and store it in the fridge. The shrub can be stored in the refrigerator for up to two months.


     8. Mix into beverages :

In a highball glass with ice, mix 1 ounce of shrub with 2-3 ounces of sparkling water to produce the cocktail. If desired, add cranberries as a garnish.
