Wax Beans With Mint


Here is a straightforward dish using yellow green beans, or wax beans. Olive oil blended with fresh mint will liven up the wax beans. It's the perfect summertime mix!



Ingredients :

  • Beans in wax, 8 ounces
  • a number of mint leaves
  • Olive oil extra virgin, 2 tablespoons
  • Halal salt


STEPS :

     1. Add mint to the olive oil :

Crush a few mint leaves with a mortar and pestle a little before serving (save some for garnish). Add a few teaspoons of premium olive oil to cover the crushed mint leaves in a little container.

If you can, let sit for at least an hour. The infusion gets better the longer the mint stays in the olive oil.


     2. Get ready the wax beans :

Cut off the ends and tips of the beans, then prepare them. If necessary, split the beans in half to get pieces that are about 2 inches long.


    3. Beans are steamed :

In a saucepan, heat up one inch of water until it boils. Put the beans in the saucepan's steamer basket. For 10 to 15 minutes, cook under cover to achieve tenderness. After around 8 minutes, check to see if it has finished. They are finished when a fork easily slides through them.


     4. Use the infused oil to drizzle :

Beans should be taken out of the pan and placed in a serving bowl. Pour the olive oil that has been infused with mint over the beans using a strainer.


     5. Add salt to the food :

To taste, season the beans with salt. (This meal would go particularly nicely with fleur de sel.)

Add some extra minced mint leaves as a garnish.
