 Easy 3-Ingredient Crème Brûlée


The best baking tip I discovered this year was a 3-ingredient crème brûlée.



Ingredients :

  • 1 pint ice cream, melted
  • 2 large egg yolks
  • 4 teaspoons sugar


Special Equipment

  • Kitchen torch


STEPS :

     1. Preheat the oven to 325°F :

Boiling water is started in a kettle. It is required to bake the custard.


     2. Make the custard :

In a medium bowl, add the melted ice cream and whisk in the egg yolks until well blended.


     3. Bake the custard : 

4 3-ounce ramekins should be put in a square baking dish. Evenly distribute the custard among the ramekins; it's fine if it reaches the top. Fill the baking dish with boiling water until the sides of the ramekins are about halfway up the dish.

Transfer carefully to the oven, and bake for about 40 minutes, or until the edges are barely set but the center is still a little wobbly.


     4. Cool the baked custard :

Carefully take the ramekins from the water, and then let them cool on your counter for about an hour to reach room temperature. If you'd like, you can place them on a wire rack. Then, wrap them in plastic wrap and place them in the refrigerator for at least two hours to cool and thoroughly solidify.


     5. Brûlée and serve : 

One teaspoon of sugar should be equally distributed over each crème brûlée just before serving. Start your kitchen torch, then hold the flame 4 inches or less away from the sugar. When the sugar melts and turns golden brown, move the flame across it.

The ramekins can be baked for 3 to 4 minutes on high under the broiler if you don't have a torch. Keep looking at it and make sure not to leave. Serve right away.
