 Foil-Wrapped Baby Back Ribs


Baby back ribs cooked on a barbeque should be sealed in foil and finished over wood chips to drastically reduce cooking time. For delicious, tasty ribs, it just takes a third of the time!



Ingredients :

For the rub

  • 1 tablespoon kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons granulated garlic
  • 2 teaspoons dried thyme
  • 1/2 teaspoon ground black pepper


For the ribs

  • 2 racks baby back ribs, each 2 to 2 1/2 pounds
  • 1 cup barbecue sauce


Special Equipment

  • 1 cup hickory wood chips, soaked in water for at least 30 minutes


STEPS :

     1. Prepare the grill :

Set up the grill for direct cooking at 350 degrees Fahrenheit.


     2. Prepare the rub :

Add the salt, paprika, garlic, thyme, and pepper to a small bowl and stir to blend the rub ingredients.


     3. Prepare the ribs :

Each rack of ribs should have the membrane on the back removed. To make two smaller racks, make a crosswise cut across the centre of each rack.


     4. Season the ribs and wrap in foil :

Apply the rub equally to each half rack. Double-wrap each half rack in its own packet using eight sheets of heavy-duty aluminum foil measuring 18 by 24 inches.


     5. Cook the ribs :

Get the grill grates clean. The ribs should be cooked for an hour on a grill over direct medium heat with the lid covered and occasionally turned over for even cooking while being careful not to pierce the foil.


     6. Remove and rest :

After taking the packets from the grill, give them a 10-minute resting period. Open the foil packages with caution, take out the ribs, and then throw away the foil and rendered fat.


     7. Baste, then add the wood chips and serve :

In accordance with the manufacturer's recommendations, drain the wood chips and add them straight to the smoldering embers or to the smoker box of a gas barbecue. Return the ribs to the grill with the bone side down once the wood starts to smoke.

Grill the vegetables for 10 to 12 minutes, rotating once or twice, over direct medium heat with the lid closed as much as possible, until they are sizzling and gently browned. Give the food a few minutes to rest after removing it from the grill.

Slice each rib into a single piece, then serve heated with any extra sauce.
