Ingredients :
- Kosher salt, to taste
- 2 pounds of celery root
- 1/2 cup of milk or cream
- 3 tablespoons of unsalted butter
Optional :
- Chopped celery root leaves for garnish
STEPS :
1. Boil the water :
Salted water boil using a large pot. For every 2 quarts of water, 1 tablespoon of salt should be used.
2. Peel and cube the celery root :
While the water is heating, peel the celery root using a knife. Cut it into 1-inch pieces.3. Boil the celery root :
Add the cubed celery root to the boiling water and let it cook for approximately 25-30 minutes until it becomes soft.4. Drain and steam the celery root :
Once cooked, drain the pot and return the celery root to the stove on low heat. For a minute or two, steam the celery root under a cover while gently shaking the pan to keep it from sticking.5. Mash the celery root :
Using a potato masher, mash the celery root until it reaches your desired smoothness. Add butter, milk or cream, and a large pinch of salt. Mix well.6. Optional garnish :
