 Shrimp and Mushroom Stir Fry


For quick, healthful dinners, you'll want to keep this quick recipe for shrimp and mushrooms in your back pocket. It is a fantastic weeknight supper and only takes a few minutes to put ready.




Ingredients :

  • 1 pound of large shrimp (31-35 per pound), peeled
  • 12 ounces of cremini mushrooms, quartered or sliced
  • 2 tablespoons olive oil

  • 3 Chopped scallions

Regarding the basic stir-fry sauce :

  • 1 1/2 cups of chicken broth
  • 3 minced garlic cloves
  • Soy sauce, 1/4 cup
  • cornstarch, 2 tablespoons

Serving and adornment :

  • served with cooked white rice
  • Sesame seeds for decoration

STEPS :


   1. Make the sauce for the stir-fry :

In a small bowl, combine the cornstarch, garlic, soy sauce, and chicken stock. Place aside.


   2. Prepare the mushrooms :

Add olive oil and mushrooms to a large skillet or wok and heat through on medium. Cook for about 8 minutes, or until the edges and caps of the mushrooms start to brown.


   3. The shrimp, too :

Add the shrimp to the skillet once the mushrooms are cooked to your preference. To prevent the shrimp from sticking, add a fresh drizzle of oil to the skillet if it is really dry. Cook shrimp for two to three minutes, stirring frequently, until they are well cooked and no longer translucent.


   4. Complete the stir fry :

Add all of the stir-fry sauce to the skillet once the shrimp are done cooking and swirl to mix. The resulting sauce should barely cover the components in the stir fry, like a thin gravy. Add a tablespoon or two more of water to the sauce if it becomes too thick. Allowing the sauce to boil for 1-2 minutes will cause it to thicken if it is too thin. Add the chopped scallions last, and stir.


   5. Serve :

Serve the cooked white rice topped with sesame seeds beside the shrimp stir fry.
