Broccoli Cheddar Egg Bites


These quiche-like broccoli, cheese, and egg treats are perfect for brunch, gatherings, or kid-friendly lunches. They are prepared in little muffin tins.




Ingredients :
  • Bouquets from 1 substantial bunch broccoli (about 300g broccoli florets)
  • 2 big, lightly beaten eggs
  • Fresh bread that has been shredded (into tiny bits) into 1/2 cup and packed
  • Onion, grated in 1/4 cup
  • Mayonnaise, 1/4 cup
  • shredded, packaged, sharp cheddar cheese, 1 cup (4 ounces, 114g).
  • 1/4 teaspoon freshly crushed black pepper
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon lemon zest

STEPS :

   1. Preheat the oven :

Set the oven to 350°F.

   2. Chop and steam the broccoli :

In a saucepan with a steamer basket, add 1 inch of water. up to a boil. Flake broccoli into the dish. The broccoli florets should be barely soft after 5 minutes of steaming. To stop the cooking, rinse with cold water.

The broccoli florets should be finely chopped. 2 1/2 cups should be about right.

   3. Creating the filling :

In a large bowl, combine the beaten eggs with the shredded bread. Mix until all of the bread is saturated.

Add the cheese, mayo, shredded onion, lemon zest, salt, and pepper. Add the broccoli minced and stir.

   4. Spread the broccoli mixture out :

Spray non-stick cooking spray into the wells of the two small muffin tins (1 dozen wells each). We advise using micro muffin pans that are non-stick.

Place the broccoli mixture in each muffin cavity.

   5. Bake :

Bake for 25 minutes at 350°F, or until well cooked and the top is just beginning to brown.
