Chickpea Panini


Having trouble coming up with lunchbox ideas? Kids and adults will both like this chickpea panini, which is made in one bowl using chickpeas, goat cheese, shredded carrot, and lemon juice.




Ingredients :

  • Chickpeas in one (15-ounce) can
  • fresh lemon juice, plus additional for assembly, 2 tablespoons
  • two tablespoons of extra virgin olive oil, plus additional for assembly
  • 1/8 teaspoon cumin powder
  • 3 ounces of chèvre, a soft goat cheese
  • 1 cup of grated carrots, loosely packed (from 1 medium carrot)
  • 18-inch baguette, one
  • Arugula, 1 1/2 cups, lightly packed
  • Salt to taste

STEPS :

     1. Making the chickpea stuffing :

The chickpeas should be drained in a strainer or colander and then rinsed under cold running water. Good drainage Add the ground cumin, olive oil, and lemon juice after transferring to a medium bowl. The chickpeas should be mashed into a thick, chunky paste using the back of a fork.


     2. The cheese and carrots, please :

Add the carrots to the bowl along with the crumbled goat cheese and stir thoroughly.

     3. The baguettes with :

Three 5- to 6-inch slices should be cut from the baguette. Save any leftover bread so you can use it later.
You want each piece to be connected along one edge so you can open the baguette like a book, therefore do not cut each piece in half all the way through. Spread out the chickpea mash evenly among the 3 pieces.
Add some arugula on top. Add a little olive oil, a squeeze of lemon juice, and a sprinkle of salt on the top. Serve.
They don't keep well, leftovers. To prevent soggy bread, I advise making sandwiches the day you want to eat them.
