Strawberry Eton Mess
This effortless dessert is perfect for spring and summer. Simply fold store-bought meringue pieces into whipped cream and fresh strawberries, then serve in glass dishes. It looks elegant, but no one will guess how easy it is to make!
Ingredients :
- 1/4 cup sliced almonds
- 1 pint strawberries, hulled and sliced
- 1 tablespoon strawberry jam
- 2 ounces store-bought meringues (broken into pieces, about 3 cups)
For the Whipped Cream
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
STEPS :
1. Toast the Almonds :
Preheat the oven to 350°F. Spread the almonds on a baking sheet and bake for 8 to 10 minutes, until golden and fragrant. Let them cool.
Alternative: Toast almonds in a dry skillet over medium heat for 4 to 5 minutes, stirring constantly. Transfer to a plate immediately to prevent burning.
2. Prepare the Strawberries :
Set aside a few strawberry slices for garnish.
In a bowl, toss half the strawberries with the jam and mash them with a fork or potato masher. Let sit while you whip the cream.
3. Whip the Cream :
In a mixing bowl, beat the heavy cream and vanilla until soft peaks form. Stop once the cream is thick but still soft and slightly loose.
4. Combine the Ingredients :
Gently fold the mashed and sliced strawberries into the whipped cream, creating a swirled effect.
5. Assemble and Serve :
In four 8-ounce glasses or bowls, layer spoonfuls of the strawberry cream mixture with broken meringue pieces. Repeat the layers.
Top with toasted almonds and reserved strawberry slices. Serve immediately and enjoy!
